Foodie Friday – Cauliflower Fried Rice

I’m sure everyone has seen the increase in popularity of cauliflower recently.  It’s a vegetable that I really love so I’m always happy to try new ways of cooking it. One of my favourites is my version of cauliflower rice. It’s very simple, very quick and after you’ve made it the first time, really doesn’t need a recipe.

Cauliflower Fried Rice

Ingredients

600g cauliflower, chopped
2 teaspoons vegetable oil
1 garlic clove
4 beaten eggs
1/2 cup frozen beans
2 spring onions
3 tablespoons soy sauce
Herbs of your choice

 

Method

Place chopped cauliflower stems and florets in a food processor until finely chopped. Transfer to a bowl.
Heat the oil, over high heat, in a wok or pan, add the cauli rice and cook storing for 2 minutes.
Add garlic and toss for another 2 minutes. Place aside in a bowl.
In the wok or pan cook the eggs until set. Add frozen beans and 1 tablespoon soy sauce. Cook, tossing for 2 minutes or until the
cauliflower rice is cooked and lightly coloured
Divide between four serving dishes and add spring onions and herbs. Pour remaining soy sauce over top.

This can be made with half cauliflower and half brocolli. It’s actually my preferred way of having it. I don’t like soy sauce or garlic, so I never put them in, as it’s usually only me eating it. It does make the recipe quite bland, but bland is the way I like it. I also love it with the eggs served, poached, on top. Use any veges that you have in the fridge.

    I really don’t like cauliflower but I like broccoli and I can see myself giving this a go. I’ve heard so much about cauliflower rice this year tgatbit seems to be the on trend vegetable 😊 thanks Jennifer, for the easy recipe and once I’m home I promise I’ll give it a try.

    I’ve seen this before Jen and never tried it. We don’t actually eat much rice but we do like steamed cauliflower. Thanks for the recipe and I’ll give it a try. Loving the Foodie Friday idea. Have a lovely weekend, I just ran 31km this morning so I’m putting my feet up this afternoon. xx
